Fruit and alcohol? Chocolate and cheese? The surprising science of food pairing

Food scientists and chefs have been investigating and comparing the flavor compounds in various ingredients

For some, recipe writing is an art, born of intuition and pragmatism. But like most disciplines, the culinary world has become susceptible to the pull of data.

In recent years, food scientists and chefs have begun studying the flavor compounds that appear in certain ingredients and searching for similarities elsewhere. Sites like Foodpairing.com even offer paid AI services to chefs looking for new combinations, as well as to customers seeking to better understand their own palates.

Close finish can fire Tour de France Femmes to greater heights

Kaisa Niewiadoma’s win, the closest in Grand Tour history, helped capture public imagination but the race has a few problems to solve

Kasia Niewiadoma’s nail-biting success in the Tour de France Femmes on Sunday was long-awaited and wholly deserved, and came after countless near misses in other major races. The Polish rider’s thrilling victory, late on an Alpine afternoon as a chilly sunset enveloped Alpe d’Huez, came at the expense of a crestfallen Demi Vollering. The defending champion lost her title by four seconds.

It was the narrowest margin of victory in the history of Grand Tour racing and came during a season when men’s racing has been monopolised by one dominant rider, Tadej Pogacar. The women’s Vuelta, Giro and Tour have been won by three riders and by narrow margins.

Presidential nominee shares AI-generated images, contributing to spread of online election disinformation

US politics – live updates

Donald Trump shared several AI-generated images of Taylor Swift and her fans vowing their support for his presidential campaign on Sunday, reposting them with the caption “I accept!” on his Truth Social platform. The deepfakes are part of a slew of images made with artificial intelligence that the former president has disseminated in recent days straddling the line between parody and outright election disinformation.

The AI-made images Trump shared over the weekend depict a series of young, smiling women in “Swifties for Trump” T-shirts, as well as one that shows Swift dressed as Uncle Sam encouraging people to vote for the Republican presidential nominee. Each image is a screenshot from X, formerly known as Twitter, and was originally posted by rightwing accounts with a history of sharing misinformation. Swift has not endorsed Trump.

Exclusive: RCN renews call for investigation into sector as unscrupulous employers target vulnerable workers

The number of foreign social care workers reporting that they are trapped in exploitative contracts has risen sixfold in the last three years, in the latest evidence of widespread abuse of migrants in the British care system.

Data from the Royal College of Nursing (RCN) shows that the organisation was contacted 134 times in 2023-24 by care workers reporting that their employers were demanding large sums of money from them to cover “hiring costs”, including visa processing, if they left their jobs. This figure was up from 22 such complaints just three years ago.

The Guardian view on Africa’s mpox outbreak: Covid lessons need to be learned | Editorial

0

It is in everybody’s interest that wealthy nations do a better job at getting vaccines and assistance to where they are needed most

After two years of post-Covid talks, member states of the World Health Organization (WHO) failed this summer to agree plans for a more equitable distribution of vaccines to developing countries. Ensuring that life-saving doses are available to countries most in need of them, rather than merely to those with the deepest pockets, is not only a moral imperative. It is in the self-interest of every nation, given the propensity of viruses to mutate and migrate. But achieving this requires big money and big concessions from pharmaceutical firms. And so, dispiritingly, the haggling goes on.

Maybe the warnings over a new, more severe strain of mpox in Africa will finally concentrate minds. Last week, the WHO declared the current outbreak of the virus “a public health emergency of international concern”. Highly contagious, mpox can be spread through skin-on-skin contact, the sharing of contaminated materials and contact with animals. The new “clade 1” variant appears to have a significantly higher mortality rate of about 4%. Cases have now been detected in 13 African countries, the overwhelming majority in the Democratic Republic of the Congo (DRC). More than 500 people have died so far.
